Our philosophy: The Chocolatier should make you happier
We believe that chocolate is more than simply delicious. It’s a way to bring joy to life, if even for the moment. We want people who visit our store; who taste our chocolate creations to have an experience. From watching our chocolate being made right in front of you inside the store, to enjoying the comfortable, warm ambiance of our store, and being welcomed and served by one of our staff, we offer a small oasis in your hectic day.

Whether you’ve just stopped in to take in the aromas of chocolate making, or you’ve indulged in one of our many chocolate treats, we want you to feel a little bit better when you leave our store than you felt when you came in.

The same is true for shopping on line. While it’s hard to reproduce the smell of chocolate in production, we hope you find the site enjoyable to view, easy to find what you’re looking for, and that when you leave, you’re eagerly anticipating the soon-to-arrive package with your chocolate delights.

Freshness and quality make us better
Our products are made in store. Fresh is what makes the difference. Large chocolate manufacturers produce in bulk. Because their supply chains are so large – from manufacturer to warehouse to distributor to retailer to customer – it takes longer for their product to get from production to your taste buds.

At the Chocolatier, we make it in store and ship it direct to you. It just doesn’t get any fresher unless you make it yourself! But why bother with fresh if it’s not the best quality to begin with? We use only high quality European chocolate. Our milk chocolate has a minimum of 30% cocoa solids; our dark chocolate has a minimum of 70% cocoa solids. The percentage of cocoa solids is one measure of quality.

Another indicator of quality has to do with fats in chocolate. Chocolate is made from cocoa beans which contain their own fat: cocoa butter. It’s the cocoa butter that gives chocolate its characteristic creaminess. And the melting point of cocoa butter is lower than body temperature, which makes it melt in your mouth.

While we cocoa with all its inherent cocoa butter is the most delicious, melt-in-your-mouth treat, it’s not easy to work with. Chocolate with 100% cocoa butter requires tempering – a process of heating and cooling and reheating the chocolate within specific temperature ranges to create a chemical reaction that results in a shiny finish, smooth texture, and good “snap” when you bit into it.Some chocolatiers and manufacturers use chocolate that has had some of the cocoa butter removed and replaced it with vegetable oils. This makes the chocolate easier to work with, and may eliminate the need to temper the chocolate. But we think it also sacrifices authenticity, flavour, and overall quality.

At The Chocolatier, we use the highest quality chocolate possible for our products. Even though this means we need to take more time and care to ensure the end product meets our standards. Our customers are worth it. Indeed, they expect it!
